Good Morning Mike:
I wrote an extensive real time stats reporting system using a touch screen as 
the hand eye coordination is better when pointing with a finger  verses 
pointing and clicking with a mouse when 10 skaters are screaming off the ice at 
the same time. I use Panasonic Toughbooks with touch screens for this 
application and they work well and are very durable. When our stats person 
journeys across the river to the NY Rangers house some of their fans try to 
pour beer into the keyboard from above the press box...she just shakes the beer 
out and continues. What a waste of a fine beverage...
The system has been running for about 2 years and here is what I found:
1.  make the objects large enough so a finger can select the object; however I 
recommend a stylus of some type
2. 'play' with the click sensitivity so an unwanted click does not register; 
the selection should be the result of definite tap and not a brush of the 
screen but not so hard that the user has to fight the click.
3. because the users will take to the touch screen like a duck to water they 
will make selections very quickly; I have found that if you place and audible 
feedback on the key the user gets a positive feedback when the selection is 
made. Sometimes a user's touch is too light and it does not register. The 
audible feedback in my app is selectable on/off and the user has a choice of 
sounds it makes...I believe that quick selections are a function of the mouse 
driver lag
4.  avoid if possible a right click on an object; right clicks usually involve 
holding down the ctrl key and making a click
5.  void is possible a click and drag with tiny objects for obvious reasons
6. add some easy access to certain controls; for example on a combobox 
selection I drop the box for the user when it has focus so it saves a selection 
on a tiny dropdown arrow
