Marshall,
Brian's comment is at least a partial solution: I find that on
my Mac (and under J602; haven't tried J802 yet) option+key gives
various characters. In particular opt+m -> greek mu, what I need.
Others are opt+ o,w,s,j,z -> phi, cap sigma, beta, cap delta,
cap omega. But far from complete.
If I type the opt+m into the xcaption, it comes through in
both the 'show' plot and the .pdf plot.

I've tried and failed to get greek characters into captions. Simply
using unicode is not sufficient, and I believe there was some reason
that even using the appropriate pdf encoding wouldn't work. It's
probably possible to hand-edit the pdf output but I did not try that.

Brian,
Thanks so much: titlefont, labelfont & captionfont are
exactly what I needed.
I still have to figure out the geek characters, but I
can always spell them out :-(

Patrick,
If you search on the following page for ΒΈ"font" I think captionfont may be
effective.

Greek fonts are out of my knowledge, except that on a Mac some
Option+keystroke produce *greek characters.*
