I would suggest adding the 'date' sorting field to the root collection. The way the 'Sort by' box is created is, for each collection, it first looks if there are any sort fields defined for it, if not, it will look at the root (Home) collection and take its sorting fields. So, by adding the date to the sorting options for the Home collection you are sure all the child collections will display it (except if some particular collection has its own sorting fields defined, in which case you will have to explicitly add it also to that collection). The administration of the sort options for a collection is done via the WebSearch Admin.
