I can speak to the lack of menu options that you see.  Redhat stated that 
they have made a decision that on the main default menus to only list one 
of each type of application (one email program, one browser, etc) in order 
to avoid confusion for new users.  If there are other programs of a type 
loaded (more email programs, etc), all you have to do is go to the 
"Extras" menu and they are there.

Just remember that bluecurve and the streamlined menus are to make things 
easier for new users.  Yes, parts are a little frustrating for older users 
however if you know what you are doing you can change any of them to what 
you want.  Best to have the default setup clean and easy and let people 
customize it was they want to if they know how.
