Looking at /etc/X11/prefdm you see that $DISPLAYMANAGER is used instead DISPLAYMANAGER="XDM" will get you xdm for logins.
If you read /etc/X11/xinit/Xclients you'll see that valuves for DESKTOP are GNOME, KDE, and WINDOWMAKER and set PERFERRED.
But if you look in /etc/X11/xinit/xinitrc you'll see the $HOME/.Xclients is used in preference to above if it exists.
