Off the top of my head and totally untested...
Bring the system into single user mode, unmount /var (if it is on a
mount point), move the data (or copy it if your paranoid [which you
should be]), add a mount point for the new /var and bring the system
back up.
You might even want to boot into the rescue CD or boot floppy to do
this.
