The 003 does feature Flip Mode. There's a button on the console labeled "Flip." When the surface is in plug-in view, pressing the flip button will make the faders display the plug-in parameters for variable values. It doesn't flip for certain functions like Bypass or most two-state parameters but rather things that would usually be either a knob or slider.
