Hi Ramy,
If you're talking about merging new MIDI data with a previously recorded part 
on the same track, what you want is MIDI Merge to be enabled. You can either 
open the Transport window with Command Num Pad 1 and navigate to the MIDI Merge 
button or, in the Edit window, navigate to the Transport cluster as long as you 
have it set to be displayed and get to the same control. Or you can do it the 
easy way by pressing Num Pad 9 to toggle MIDI Merge if you're using Transport 
mode on the num pad, which you probably are. With Flo Tools, you can report the 
MIDI Merge status with Option Num Pad 9 and toggle it with a double tap.
Elastic Audio is mildly accessible but that's for audio not MIDI.
