Should be simple, PULSE_SINK= env var does that for you.

But a better option in your case is x11 properties. Pulse can get it's configuration from the X11 Root window, e.g. "xprop -root"

Just set the PULSE_SINK xprop on the root window of DISPLAY 1.0 and you're all set.

You can get the name you want to use via "pacmd list-sinks"

Nice easy one to answer that :D
