Problem solved... although I don't understand how or why!

Basically I went back and removed all entries related to PyDev in my eclipse
directory (although it was a fresh install) and installed again using the 
Update.
It works now!

BTW. the log file you mentioned doesn't contain any errors related to PyDev...
so I really don't understand what happened!
