Unfortunately spammers can create email addresses very quickly, and CAPTCHAs are inherently weak (even the best of them are easily cracked by the Chinese human "botnets"). However, I wouldn't be against a system of spam filtering with three levels: Not Spam, gets straight onto the list; Definite Spam, gets deleted; and Dubious, which gets dropped into a mod's basket.
