PIL works fine in a stand-alone in general, but.... both ImageMagik and PIL are raster format packages. EPS is a vector format, so I think both PIL and ImageMagik use ghostscript to render the EPS for you, and I think they both use it as an external application, so the users of your stand-alone are going to need to have ghostscript installed.
