MacOS: HostOnly network configuration steps or scripts?

Does anyone have a script, steps or links on how to configure Host Only
networking?

I'm using Monterey and Ventura.  I would like to use my own DHCP server as
well.

I know Ventura relies on Tunnelblick, not sure about Monterey.
