Hopefully will be fixed for the next QGIS version 3.16.3 (tomorrow or some days after). Anyway you can install gdal300dll and proj62dll packages (like dowgrading the grass package from 7.8.5-1 to 7.8.4-1) using the OSGeo4W Setup. Regards.
