You will probably need to override the GDAL command in the bottom box with the pencil icon. The gui only has a limited subset of options. http://www.gdal.org/gdalbuildvrt.html *.tif is allowed as the input file, which would do all tifs. The other approach is to create a list of all files you want to include 1st.
