I made a project to show all variables status : as you can see on the image, most are null ("A" on map)

This is on QGIS 2.18 right? Server on 2.x doesn't have support for
variables (you need 3.0). For 2.18 try using "$scale" instead of
"@map_scale" - that should work in both desktop and server.
