I did have SCP installed and that was the issue! Thanks for the pointers. I uninstalled that plugin and now the default profile works fine for georeferencing.
The latest version 7.10.8 of the The Semi-Automatic Classification Plugin (SCP) allegedly doesn't cause the issue.
