Thanks, I should have found that, but was tripped up by https://github.com/qgis/QGIS-Website/issues/961 and not reading carefully enough.
I wondered if it was a radius, but I thought if so I would be able to type a radius in to turn a vertex into a curve - I was mainly confused because digitising curves doesn't work here for CompoundCurve and MultiCurve memory layers (they are digitised as if the provider doesn't support curves; maybe I have a plugin that is causing this problem). Now that I've tried a CurvePolygon layer it all becomes clear. And I see that to convert between a vertex and a curve you select it with the node tool and press 'o'. Thanks.
