The problem wit a grid is, that you always need a projection to draw it. Plus the grid can have it's own projection. Both projections together define the visual appearance of the grid. That said, you can select --- No map --- in the list of raster maps. Once selected you do a right click on the entry and select Info/Config. Now you can define a projection and a scale. Next you setup your grid with the wrench tool button in the very right bottom of the status bar.
