I still have to add a little thought here.

If I want to use one server as 'hot standby' with a second MX entry, this 
server has to have a second ip, right?
So, if I'm getting this right here, someone who wants to send mail to a 
domain looks up the MX records and tries to send. So this is ok for smtp 
(even if the first is down, because the second MX accepts the mail).
But what's with the pop users? They have setup one mailserver address in 
their mail-clients, so they would still try to connect to the first server 
which might be still offline (because the 'hot standby' server has different 
ip's).
Well the more I think about it, the more complicated it is...
Somehow it seems, anyways, there is still one single point of failure, the 
pop dns address (or how is it possible to have one server able to 'take over' 
the ip address from the first, failed server?)
