Read the dot-qmail man page.
Short recipe:

Put this into ~user1/.qmail :

&[EMAIL PROTECTED]
./Maildir/

This will send a copy to the given address and save the message in 
user1's Maildir.

You can make this more intelligent so that centralspy never generates any 
bounces but this does the job.
