Every day I get a problem that makes me do the "deer in the headlights"
thing.

There is only one little glitch... Everyone is receiving emails now, and
sending too, but only from the web interface.

I just set up a remote user on her laptop & blackberry (using IMAP), but
when sending from the laptop or the blackberry, they get the "not in my list
of rcpthosts" error message.

I have SEEN this somewhere... (is it smtpauth?) All the users will be
remote, how do I set them up so they can open outlook (configured with IMAP)
and send mail as easily from Borneo as from the internal network?

I don't entirely grasp everything you said, but I appreciate you explaining
it for posterity. It'll no doubt be helpful to some poor soul down the line.

If you could summarize this configuration into a mini-howto, it'd be a nice
addition to the wiki. Don't fret about making it pretty. Just get it out
there, and I'll try to polish it up.
