I run toasters on VMware Server 2. Personally, I'd keep them separate. Samba is usually better suited to a lan, while the toaster is on the wan. They should be on separate subnets for security reasons. You could use 2 nics (one facing out, the other in), but that can be risky and troublesome.

I have a few setups I've done on a VMware Server 2 with IPCop, QMT, and samba guests all (3) running on the same host, with the toaster on a hostonly subnet, and the samba server bridged to green. You can bridge the red directly to the external nic on the host without giving it an address on the host. That way the host is only accessible from the green network, unless you set up a VPN of course. I think it's a pretty slick configuration.
