Hey Diana, I am using RoundCube myself and I am very happy with it. It is exactly what you said: A Webmailer without all the bells and whistles others offer.
Installation is easy and straight forward. You can try it out on any LAMP host and point it towards your IMAP/SMTP host to try it out. Or I make a quick account for you to see the UI ;-) Sidenote: I have written an Opscode Chef cookbook for it too.
