Hello Agustin,
qx.xml.Document is pretty new and currently only in svn but the API
documentation should be complete. If you use the svn version just update
your sources and build the apiviewer. The function you are looking for is
qx.xml.Document.fromString("<xml> some xml string here</xml>");
