The best way is to use the Makefile variables e.g.
APPLICATION_THEME_APPEARANCE
Simply set it to the full classname.
This is the same for the setter. The first Parameter needs to be a
reference to the theme. (BTW: In your case the setter should print out
an error that the incoming value is invalid).
Change it to:
qx.theme.manager.Appearance.getInstance().setAppearanceTheme(my.theme.Ext);
