You can remove the icon easily by doing 
panel.getChildControl("bar").setShow("label");
It would be nice as well for the horizontal layout if we could have 
vertical text support in atom. Somebody asked about this not long ago 
but I think we decided it was a no go.

This isn't going to be trivial :( It should be easy enough to get it 
working when we are just stacking panels but an animated accordian will 
be much more difficult, at least the open animation any way.
