First of all, that you don't see a difference probably has two reasons: You have to have PDF documents that contain overprint areas and you need to have compiled Poppler using CMYK support. What it does is to ask Poppler to try to simulate the subtractive mixing of several layers of color on a printout (in contrast to the additive mixing the your monitor does).
