I take your point, but just because it is industry standard doesn't mean it must be used. Unless you are teaching Photoshop courses so that the students can use it in industry, I see no advantage. Every skill you can learn in GIMP can be transferred to Photoshop - even some of the icons and menus look similar. I have actually had a seasoned Photoshop user fall in love with GIMP and he actually stopped using Photoshop. There are a very few minor features that Photoshop offers, that GIMP doesn't, but aren't we teaching skills, not applications?
Anyway there's my 20c. Having said that - I use Photoshop, GIMP, Paintshop Pro, IrfanView, Fireworks, Swish, Flash and any other image manipulation application I can get hold of. I have recently discovered Serif DrawPlus - free version of a vector drawing package. Very nice.
