  My son's smoker is a trailer, too, and his fryer sits up by the yolk on it.  
And even though he does smoke more than one turkey at  a time, I trust his 
judgment in the one he brings over here!

southeast Houston... Fried Turkeys were a HUGE hit!  There was one place that 
made them extremely well and folks had to order them 30 to 40 days in advance!  
With a hint of mesquite or so as well.
