If an environmental control system allows one to turn electronic things  on 
and off there has to be a way to do this for a security system. Every state 
 has an Assistive Technology program that may have suggestions or you

The only other thing I can think of is, if the system is activated  by a 
keypad is attach it to a bed.rail. If standard keypads are  too small, there 
might be larger products for the visually impaired, and Radio  Shack might 
have something that could be easily adapted.
