8.1 marked Apple's move to the HFS+ file system. The 68k Macs can read the HFS+ file system with 8.1 however they can not boot from an HFS+ partition.
Personally I feel that 7,1 does very well on my Quadra and I am curious about your reasons for upgrading. I used OS 8/8.1 on my Quadra for a while, but eventually I moved back to 7.1 because it just seemed a bit more nimble to me.
