Weight is one to think about.
You could replace the spare wheel with a can of foam, replace the rear
windows with polycarbonate and only half fill the fuel tank at any one
time.
If it is only you who uses the car, try removing the rear seats and
belts as well. Fix the headlight flaps down and remove the lifting
motor and rods, and remove the spot lights as well.
One rear fog light could also go.
any soundproofing and carpet can go as well as the headlining and rear
quarter panels. If the car is of a certain age the left hand door
mirror can be lost.
Belive it or not this could still get past an MOT but boy would it not
be the car you would wish to drive.
Oh and before I forget, buy some electrical insulation tape and stick
it over the panel gaps around the bonnet, boot, left door and the fuel
cap.
Then write a report for the club magazine so we can see how much
further you are going to the gallon.
