The neatest option is to get the choke cable and bracket/pod from a
Mk2 Fiesta that had a manual choke.

There is a blanking plate on the bottom of the dash to the left of the
steering wheel, it fits in there.

 However, I am wonder where the best place is to fit the choke knob,

   In the dash is there a blanking plate I can use?
