1. Ok, that was what I was afraid of. But let me rephrase the question then. Is there a list somewhere with which protocols are in place today for iTunes? The Visualizer template, do that contain all of them already?
A protocol is just a defined way to get data into and out of a composition. All the protocols are listed in the Protocol Conformance dialog (option-cmd-P):

iTunes only obeys the Music Visualizer protocol -- a composition can obey more than 1 protocol, but an app will only ever make use of the ones it was designed for. When you add a protocol (through this dialog, or when creating a new composition from a template), it'll add _all_ the required inputs/ outputs, and _all_ the optional inputs/outputs. So what you see is what there is.
2. And for future reference, is there a list with other applications protocols that Apple provides? Maybe I will hit the same snag when doing something for iphoto, iMovie etc.
The list above is all of them. Applications will pick compositions that support the protocols they require (iTunes selecting Music Visualizers, for example), but I don't know if each app will let you know what protocol it's looking for. (In many cases it's implied, but sometimes it's not so clear)
