To my knowledge, Quartz Compositions don't currently run on iPhone.
There are many like me who look forward to this day.

Quartz Composer is certainly a useful tool for prototyping — check out
the new Interaction patch for making buttons and draggable objects.
For testing out any accelerometer-based interactions, you might
consider the free Mrmr app for iPhone which transmits OSC to the
desktop machine. It's a little fiddly to setup, but works.

My suggestions would be:

1. Draw some storyboards (on paper/etc) that show the screens and the
experience the user will have with your app
2. Mockup the interface for the what you want to see in Photoshop.
Even after your description I have *no* idea what it would look like.
3. Anything unusual/ accelerometer-driven/motion/graphically far-out
you may want to mock up in Quartz composer to see if it works in
real-time
4. Develop it on iPhone

Any QC questions will usually get fast and helpful answers on this list.

Do a lot of searching on the App store before though — with 100,000+
apps, someone may have already done something similar meaning you can
learn from them, or cancel the project.

If you have odd multitouch ideas in mind, there is a patch available
to allow MBP multitouch input into QC.
