The most I'm aware of Apple documenting this is in the "Tips" menu section titled "Interactive Placement" that is able to be viewed when one chooses the New From Template option. It doesn't really go into more detail than you already seem to have found out about.
It only moves objects in X and Y, not Z, and it has no ability to rotate (I've filed these as a feature request). All of the patches that are interaction enabled have an interaction port at the very top of the patch. I'm not aware of an exhaustive list; it may just be Sprite, Billboard, and Mesh.
