GPU access would be the biggest factor, since Crossover prides itself in good GPU/games support. But this consideration is similar to regular Linux apps as well and most of those work fine in Qubes.

I don't know of a tutorial, but you could try your app under Wine first (last time I checked, Crossover was a tweaked version of Wine).

If Crossover requires installation to /usr, etc. (i.e. it doesn't reside in /home) then you'll have to install it in either a template or a standalone VM made from a template (this is an option in the Qubes Create VM dialog). The latter should make Crossover installation simpler for testing purposes.
