I’ve found it necessary sometimes to sudo fstrim -av from inside the VM in order for the dom0 lvm thin provisioned volumes to return the unallocated space back to the pool.
This doesn’t shrink the volume but it does tell the system that it doesn’t need to store anything there for that VM currently so other VMs can use the space. Welcome to thin provisioning!
