My daughter and I made these for dinner tonight. 1 cup quinoa rinsed and drained well 1 & 3/4 cups vegetable broth 1/4 cup water 4 shallots chopped 1.5 TBS steamed garlic frozen spinach defrosted 1/4 cup oat flour 1/4 ground flax seeds 1/4 wheat germ Ener-G egg replacer equal 2 eggs a couple of sprigs fresh rosemary chopped a couple of sprigs fresh oregano chopped 1 tsp turmeric 1 tsp dried basil ground black pepper celery salt lemon juice Preheat oven to 350 degrees Pour vegetable broth and water in to a pot add Quinoa, shallots, fresh rosemary and oregano bring to boil simmer for 15 minutes or until the liquid is absorbed let sit covered for 10 minutes. Place the quinoa mixture into a mixing bowl add the spinach and steamed garlic, mix to combine add the turmeric, basil, ground black pepper, celery salt and lemon juice stir to combine. Add the oatmeal flour, wheat germ and flax seeds and stir. Add the ener-g egg replacer stir to mix well. Line a baking sheet with parchment paper and spray with cooking spay. Form patties place on cooking sheet bake in preheated oven turning after 20 minutes. Continue to cook 20 minutes longer. Let stand 5-10 minutes before eating. Eat and enjoy
