New to the group and enjoying all these recipes, thank you!

I am not a big fan of fake meat or imitation products although my 
kids love their Quorn sausages :) Good veggie sandwiches, if you 
wanted to try any without meat substitute, we can recommend are:

homemade hummus, avocado and tomato (any other veggies like sprouts, 
spring onion, water cress, lettuce would be good) on good quality 
whole grain bread

pesto, mozzarella and tomato on a baguette

Brie and tomato w/ rocket or arugula lettuce on a baguette

A good hot sandwich is roasted portobello mushroom and goats cheese. 
I usually marinate the mushrooms (put tsp of mayo and mustard, minced 
garlic, lemon juice, extra virgin olive oil, sea salt and cracked 
pepper in a jar and shake or simply Extra virgin olive oil and 
balsamic) and roast them on a rack until tender, then place them on  
toasted ciabatta or crusty bread w/ mayo, mustard, thick slice of 
good goats cheese, lettuce and tomato.

Anyway, this is what we like :)
