Drums are on 10 and, in some much older setups, 16. Nothing else is specifically designated, but it's a wise idea to set your own standards. I always put bass on channel 9, Guitar on 11, and if there's a guide vocal line I put it on 1. Your mileage will of course vary depending on what you're doing and how many tracks you need. And just so you don't get confused, you put instruments on channels and there may be one or more tracks per instrument, but unless you do a program change message in most cases you'll have only one instrument on a channel.
