Jamie,
Try it as:
data2 <- read.table(pipe('pbpaste'), header = T)
I have a read.clipboard() function defined in ~/.Rprofile:
read.clipboard <- function(){read.table(pipe('pbpaste'), header = T)}
Also see the "Clipboard" section of ?pipe.
Cheers,
Kevin
