The current installer of R-2.9.0 provides the defaults for all of the
latex related programs with the path "/usr/texbin/<name>" for 3 of the
4 architectures:

 grep texbin /Library/Frameworks/R.framework/Resources/etc/*/Renviron
/Library/Frameworks/R.framework/Resources/etc/i386/Renviron:R_LATEXCMD=${R_LATEXCMD-${LATEX-'/usr/texbin/latex'}}
/Library/Frameworks/R.framework/Resources/etc/i386/Renviron:R_PDFLATEXCMD=${R_PDFLATEXCMD-${PDFLATEX-'/usr/texbin/pdflatex'}}
/Library/Frameworks/R.framework/Resources/etc/i386/Renviron:R_DVIPSCMD=${R_DVIPSCMD-${DVIPS-'/usr/texbin/dvips'}}
/Library/Frameworks/R.framework/Resources/etc/i386/Renviron:R_MAKEINDEXCMD=${R_MAKEINDEXCMD-${MAKEINDEX-'/usr/texbin/makeindex'}}
/Library/Frameworks/R.framework/Resources/etc/ppc/Renviron:R_LATEXCMD=${R_LATEXCMD-${LATEX-'/usr/texbin/latex'}}
/Library/Frameworks/R.framework/Resources/etc/ppc/Renviron:R_PDFLATEXCMD=${R_PDFLATEXCMD-${PDFLATEX-'/usr/texbin/pdflatex'}}
/Library/Frameworks/R.framework/Resources/etc/ppc/Renviron:R_DVIPSCMD=${R_DVIPSCMD-${DVIPS-'/usr/texbin/dvips'}}
/Library/Frameworks/R.framework/Resources/etc/ppc/Renviron:R_MAKEINDEXCMD=${R_MAKEINDEXCMD-${MAKEINDEX-'/usr/texbin/makeindex'}}
/Library/Frameworks/R.framework/Resources/etc/x86_64/Renviron:R_LATEXCMD=${R_LATEXCMD-${LATEX-'/usr/texbin/latex'}}
/Library/Frameworks/R.framework/Resources/etc/x86_64/Renviron:R_PDFLATEXCMD=${R_PDFLATEXCMD-${PDFLATEX-'/usr/texbin/pdflatex'}}
/Library/Frameworks/R.framework/Resources/etc/x86_64/Renviron:R_DVIPSCMD=${R_DVIPSCMD-${DVIPS-'/usr/texbin/dvips'}}
/Library/Frameworks/R.framework/Resources/etc/x86_64/Renviron:R_MAKEINDEXCMD=${R_MAKEINDEXCMD-${MAKEINDEX-'/usr/texbin/makeindex'}}

This will only work if latex is installed in that particular path, and
 is much less likely to succeed no path prefix, which at least works
as long as pdflatex is on the users path.
