The detailed instructions are on the same page where you got the fortran from: http://r.research.att.com/tools/ The Xcode builds are using Apple's Xcode sources + libfortran + gcc/fortran from gcc-4.2.4 sources + diff is on the tools page. The build is done the same way Apple Xcode is compiled.
