I can get this to when using Builder.node('div'.... to place the div but not Insertion.After - is there a fundamental difference between the two? The Insertion.After div will drag but will not be recognized as a sortable.

Per Eric's suggestion, the simple thing to do is to make the insertion, destroy the sortable, then create the sortable again.  The method to destroy is Sortable.destroy().
