I didn't ask enough questions.
Your code works perfectly, now have my query, but how do I trigger it to work? At the end I have a variable that says 'EDIT all from Venprice where etc etc etc.' but I can't make it do the edit.

Here's how:

Assuming that you are collecting the user input in a variable, such as
vKeyword TEXT.

Use the following Code as On Exit EEP:

SET VAR vQuotes TEXT = (CVAL('QUOTES'))
SET VAR vString TEXT = NULL
SET VAR vString = ('WHERE PayCode ='&.vQuotes+,.vKeyword+.vQuotes)

The resulting vString will look like this.

WHERE PayCode = 'PH'

Once you understand this approach, use the code as you see fit.
