Yes.  Declare and set the value of your variable appropriately and then 
when using it in a command precede it with an ampersand "&" instead of the 
normal "."

i.e.

SET VAR vtable TEXT = 'REJECT'

SELECT * FROM &vtable

You can do the same thing with columns as well.

SET VAR vcolumns TEXT = 'DISPDATE,STCD_NO,STCD_DASH'

SELECT &vcolumns FROM &vtable
