Here is one way to get a list of variables:

OUTPUT TempFile.$$$
SHOW VAR
OUTPUT SCREEN
CREATE TEMP TABLE VarList (VarName TEXT (18))
LOAD VarList FROM TempFile.$$$ AS ASCII
SELECT VarName FROM VarList
