Yes, we do it all the time here.  Be sure to have a beefy Mac with a 
lot of ram for reasonable performance.  A high end G3 or G4 is 
really required.  Another way to do it is to have a couple of 
dedicated PC machines running VNC.  Works if you have a couple 
of free PCs around.  It's free I believe and can be found at 
http://www.uk.research.att.com/vnc/
